Linguine with Ricotta Cheese and Beans

Directions:

Cook the pasta in salted boiling water. Stir occasionally to avoid the noodles from sticking with one another. When the pasta is already tender, drain it. Mix it with ricotta cheese. For the sauce, get 1 cup of the water where the pasta is cooked. Saute garlic and beans. Add salt and pepper to taste. Pour the 1 cup of water from the pasta. When this thickens, add the pasta with cheese. Toss gently. Add tomatoes afterwards. Cook for 5 minutes and then serve.

Preparation Time: 30 minutes

Tropical Fruit Parfait

Directions:
Combine yogurt, lemon juice, and pepper. Set aside. Place drained fruit into parfait glasses, followed by banana. Place the yogurt mixture on top of the fruit. Add with a cup of granola. Repeat procedure until the top of the glass is filled. This may be served with a garnish of sprig of fresh mint.
